Production, Transglycosylation and Application of Stevioside


Abstract
Stevioside is a sweet glycoside extracted from the leaves of the plant Stevia rebaudiana Bertoni and has been widely utilized as an alternative sweetener in foods, pharmaceuticals, and alcoholic beverage. In this article, the structure and physicochemical properties of stevioside, production methods of natural and transglycosylated stevioside, the status of the stevioside as an alternative sweetner with high intensity, and the application fields of stevia sweetners were described. Two heterogeneous enzyme reaction systems, attrition coupled enzyme reaction system using insoluble raw starch as the glycosyl donor and heterogeneous enzyme reaction system using extrusion starch as the glycosyl donor, have been suggested for the production of transglycosylated stevioside and their feasibilities for industrial application were investigated. Above two heterogeneous enzyme reaction systems showed several advantages over the conventional reaction system using soluble liquefied starch as the glucosyl donor, such as high transglycosylation yields, fast reaction rate, and easy purification of produced transglycosylated stevioside. Finally the future consumption trends of the stevioside was discussed.
